At Hut on the Green, we believe in the power of a good cup of tea. It warms your hands, slows things down, and invites conversation. But let’s be honest — it’s the biscuits that really make it.
Our house biscuit — the one we serve at most - is the Quicky Oaty. Made by Nick (yes, the same Nick who runs the Hut and teaches woodwork), this humble biscuit has become something of a legend. The recipe was handed down from his mum, and it’s been baked, shared, and devoured by countless happy makers over the years.
Crisp-edged, chewy-centred, and just sweet enough, these biscuits are the fuel behind many a creative breakthrough. People are always asking for the recipe — so here it is.
Quicky Oaties (makes about 12)
• 100g butter
• 100g sugar
• 100g oats
• 100g self-raising flour
• ½ tsp bicarbonate of soda
• 1 tbsp golden syrup
Method:
1. Melt the butter, syrup and sugar together in a pan.
2. Remove from the heat and stir in the flour, oats, and bicarbonate of soda.
3. Roll into walnut-sized balls and place on a greased baking sheet.
4. Flatten slightly with a fork.
5. Bake at 180°C (160°C fan) for 15 minutes, or until golden.
6. Try not to eat them all before they cool.
Variations: Add chocolate chips, chopped cherries, or raisins if you’re feeling fancy.
